Healthy chicken wraps

Healthy chicken wraps

SALAD:

3/4 cup (3-inch) julienne-cut or shred peeled Jicama

1/2 cup sliced peeled ripe mango

1/4 cup sliced red onion

1 tablespoon fresh lime juice

1 1/2 teaspoons chopped fresh cilantro or fresh coriander leaves

Salt to taste

1 table spoon of Madame Sunshine Carrot and Coriander Chutney or to taste

 

TACOS:

1 tablespoon Madame Sunshine Spiced Olive Oil

1 pound skinless, boneless chicken breast, cut into thin strips 

1 tablespoon or to taste Madame Sunshine Medium Chilli Sauce

1 cup sliced red onion

Salt to taste

8 (6-inch) corn tortillas

Some green salad leaf to use as base

Preparation

1. To prepare salad

Combine first all the ingredients in a bowl and put aside.

 

2. To prepare tacos

Mix Madame Sunshine Chilli Sauce into chicken, heat Madame Sunshine Spiced Olive oil in a large nonstick pan over medium-high heat. Add red onions and cook to soften, Add chicken mixture to pan; sauté for 3 minutes or until cooked. Remove from pan.

 

3. Heat tortillas according to package directions. Divide prepared chicken into 8 portions, Arrange green salad leaf in each tortilla, add one portion of chicken mixture, and a portion of salad on top, fold over.
